<p><strong>d.lish by divine</strong> is a monthly dinner event  hosted by DiVine Events at the DiVine Cafe. We&#8217;ve created an intimate  evening for a max of 30 people to explore culinary creations  based on a  monthly inspiration. During the first week of each month, we host a  group based on the first 30 tickets purchased. Depending on the menu  served, tickets range from $40 to $50 a person including two drink  tickets. Filling, good recipes that will make even the most finicky guests happy are easy to come by if you know where to look. Here are three great recipes for large groups.</p>

<p style="text-align: left;">25 pounds spareribs</p>
<p style="text-align: left;">Cut spareribs into half pound serving</p>
<p style="text-align: left;">portions· Place in single layers in shallow</p>
<p style="text-align: left;">roasting pans. Cover and bake in 350F oven for 1-1/2 hour. Cover with barbecue sauce and bake uncovered for 1/2  hour or longer until tender, basting once or twice. Add small amounts of water if needed.</p>
<p style="text-align: left;">&nbsp;</p>
<p style="text-align: left;"><em><span style="text-decoration: underline;">Barbecue Sauce</span></em></p>
<p style="text-align: left;">9 eight ounce cans tomato sauce</p>
<p style="text-align: left;">2 bottle ketchup (24 ounce each)</p>
<p style="text-align: left;">4 tablespoons Worcestershire sauce</p>
<p style="text-align: left;">1-1/2 cups apple vinegar</p>
<p style="text-align: left;">8 tablespoons chili powder</p>
<p style="text-align: left;">2 cups minced onion</p>
<p style="text-align: left;">2 cups brown sugar</p>
<p style="text-align: left;">1 cup white sugar</p>
<p style="text-align: left;">2 cups minced green pepper</p>
<p style="text-align: left;">1 tablespoon Tabasco sauce</p>
<p style="text-align: left;">2 teaspoon pepper</p>
<p style="text-align: left;">2 tablespoons salt</p>
<p style="text-align: left;">&nbsp;</p>
<p style="text-align: left;">Add all ingredients together. Stir until well mixed.</p>

<p style="text-align: left;"><strong>Dumpling Ingredients</strong></p>
<ul style="text-align: left;">
<li>6 cup flour</li>
</ul>
<ul style="text-align: left;">
<li>1cup cold water</li>
</ul>
<ul style="text-align: left;">
<li>6 eggs</li>
</ul>
<ul style="text-align: left;">
<li>1-1/2 teaspoon      salt</li>
</ul>
<p style="text-align: left;">&nbsp;</p>
<p style="text-align: left;"><strong>Pirohy, Pyrohy, Perogie, Pierogie Dumpling Method:</strong></p>
<p style="text-align: left;">Mix all ingredients with enough water to make medium soft dough. Knead well and then roll out until thin. Cut in squares to make 50 pirohy. Place on each square 2 teaspoon of a filling. Fold in half to make triangles. Pinch edges well with thumb to keep filling from escaping. Drop in salted water and cook until all the dumplings rise to the top of the water. Then cook for 5 minutes longer. When done, pour a small amount of cold water in pot and strain. Place in serving dish and pour over butter that has been melted and slightly browned. Eat while hot, and if desired, add more salt.</p>
<p style="text-align: left;">&nbsp;</p>
<p style="text-align: left;">Dumplings may be spread carefully on breadboard after draining, to allow them to dry a bit. Then place on serving dish and you will find them less soggy or lightly fry dumplings on one side in butter with a tablespoon of minced onions until a light golden color.</p>
<p style="text-align: left;">&nbsp;</p>
<p style="text-align: left;">Below is enough filling to fill 50 dumplings using a variety of the cheese, potato and cabbage. If you only want to make one kind of a filling, triple a filling recipe below<strong>.</strong></p>
<p style="text-align: left;">&nbsp;</p>
<p style="text-align: left;"><strong>Pirohy, Pyrohy, Perogie, Pierogie - Cheese Dumpling Filling</strong><strong> </strong></p>
<p style="text-align: left;">1 cup of dry cottage cheese</p>
<p style="text-align: left;">2 teaspoon sugar</p>
<p style="text-align: left;">2 teaspoon butter</p>
<p style="text-align: left;">2 egg yolk</p>
<p style="text-align: left;">1/4 teaspoon salt</p>
<p style="text-align: left;">&nbsp;</p>
<p style="text-align: left;">Combine ingredients and mix thoroughly.</p>
<p style="text-align: left;">&nbsp;</p>
<p style="text-align: left;"><strong>Pirohy, Pyrohy, Perogie, Pierogie - Potato Dumpling Filling</strong></p>
<p style="text-align: left;">Two large potatoes cooked and mashed. Add 2 tablespoon melted browned butter and salt to taste. A few dry crushed peppermint leaves may be added. However, this is optional.</p>
<p style="text-align: left;">&nbsp;</p>
<p style="text-align: left;"><strong>Pirohy, Pyrohy, Perogie, Pierogie - Cabbage Dumpling Filling</strong></p>
<p style="text-align: left;">1 head of cabbage chopped fine. Shake 1 teaspoon of salt on it,  set aside to stand for several minutes. Then fry in 2-3 tablespoon butter that has been allowed to brown. Add 1 and 1/2 teaspoon sugar, and stir occasionally to keep from burning. Fry until golden brown.</p>

<p style="text-align: left;"><strong><em>Tequila Chicken Tacos</em></strong></p>
<p style="text-align: left;">&nbsp;</p>

<p style="text-align: left;">This is a time-tested, easy recipe that’s great for serving up a tasty Tex-Mex meal with minimal stress! It lends itself well to buffet-style service. As above, this recipe serves fifty. The original recipe, intended for a smaller group, calls for a Crock-Pot.</p>
<p style="text-align: left;">&nbsp;</p>
<p style="text-align: left;">25 lbs boneless, skinless chicken breasts</p>
<p style="text-align: left;">6 12-oz jars Pace Picante Sauce</p>
<p style="text-align: left;">375 mL (1/2 bottle) Jose Cuervo Gold Tequila (or to taste)</p>
<p style="text-align: left;">8 lemons and 8 limes (can substitute 2 bottles Realemon and 2 bottles Realime—these bottles look like lemons and limes)</p>
<p style="text-align: left;">8 bags tortilla chips or 16 12-packs taco shells</p>
<p style="text-align: left;">10 lbs shredded cheese (cheddar, Mexican mix, or Colby-Jack are best)</p>
<p style="text-align: left;">4 8-oz containers sour cream</p>
<p style="text-align: left;">&nbsp;</p>
<p style="text-align: left;">Preheat oven to 375 degrees. Cut the chicken breasts into strips about ¼ inch wide. Squeeze the juice from the lemons and limes, or simply add in the Realemon and Realime. Combine all ingredients in a deep roasting pan or Dutch oven. Bake, stirring occasionally, until the chicken shows an even color on the outside, is firm and solid under a fork, and is pale pink on the inside. (This color comes from the picante sauce and is entirely normal. As long as the chicken is firm when you cut into it, it’s safe to eat. The alcohol will cook off during the baking process, leaving only the tequila’s spicy flavor behind.) Top with shredded cheese, sour cream, shredded lettuce, tomato, and salsa if desired.</p>
<p style="text-align: left;"><em>This recipe yields approximately three tacos or one plate of nachos per person. </em></p>
